Hay, grass, green apple smell. Light taste, slightly dry and acidic. With a grass and vanilla aftertaste. The cheese makes the wine slightly more acidic and adds to the innate creamy flavor of the wine. This pairing kind of works simply because of the light flavor of both.

Smells fantastic. Floral and of sweet honeysuckle. The taste does not disappoint, it tastes exactly like it smells. Floral, honeysuckle, lemonade, and sweet tea. New favorite wine I have had so far. Pairing with the cheese works and makes the wine sweeter and brings more orange blossom taste to the wine. The cheese is creamy and works off the sweetness of the wine.

Smells like black cherry, black currant, coffee and chocolate. Very strong tasting wine. Extremely tannic that overwhelms all other tastes with that of black coffee. This pairs poorly with the cheese. The gouda was very dry and thus does not work well with the strong tannic components of this wine. This wine would work better paired with a gamey steak.
